Mushroom Soup (Polish)

Ingredients
- 30 g dried mushroom
- 300 g fresh mushroom
- 1 medium onion
- 2 cloves garlic
- 1 medium potato
- 1 medium carrot
- 1000 ml beef broth
- 100 g sour cream
- 2 tbsp dill
- 30 g butter
- 1 tsp salt
- 0.5 tsp black pepper
Instructions
- Soak dried mushrooms in warm water for 30 minutes, strain and chop, reserve liquid
- Slice fresh mushrooms
- Dice onion, garlic, potato, and carrot
- Melt butter in pot, sauté onion and garlic until soft
- Add fresh and dried mushrooms, cook 5 minutes
- Add potato and carrot, pour in beef broth and reserved mushroom liquid
- Bring to boil, reduce heat and simmer 25-30 minutes until vegetables are tender
- Stir in sour cream and fresh dill (don't boil after adding sour cream)
- Season with salt and pepper
- Serve hot with dark bread
