Mushroom Soup (Polish)

Ingredients

  • 30 g dried mushroom
  • 300 g fresh mushroom
  • 1 medium onion
  • 2 cloves garlic
  • 1 medium potato
  • 1 medium carrot
  • 1000 ml beef broth
  • 100 g sour cream
  • 2 tbsp dill
  • 30 g butter
  • 1 tsp salt
  • 0.5 tsp black pepper

Instructions

  1. Soak dried mushrooms in warm water for 30 minutes, strain and chop, reserve liquid
  2. Slice fresh mushrooms
  3. Dice onion, garlic, potato, and carrot
  4. Melt butter in pot, sauté onion and garlic until soft
  5. Add fresh and dried mushrooms, cook 5 minutes
  6. Add potato and carrot, pour in beef broth and reserved mushroom liquid
  7. Bring to boil, reduce heat and simmer 25-30 minutes until vegetables are tender
  8. Stir in sour cream and fresh dill (don't boil after adding sour cream)
  9. Season with salt and pepper
  10. Serve hot with dark bread
