Ingredients
- 2.5 cups bread flour or all-purpose flour
- 0.33 cup warm water
- 0.33 cup warm milk
- 1.5 tsp instant yeast
- 2 tsp sugar
- 0.33 cup plain yogurt
- 0.5 large egg (beaten)
- 1 tsp salt
- 1 tbsp oil
- 2-3 tbsp melted butter or ghee for topping
- 2 cloves garlic, minced
- 2-3 tbsp fresh cilantro
Instructions
- Mix warm water and milk, sprinkle yeast and sugar, let stand 5-10 minutes until foamy
- Add 2 cups flour to foamy mixture, mix and rest 10-15 minutes
- Add yogurt, egg, salt, and oil
- Gradually add remaining flour, mix until soft, slightly sticky dough
- Knead 6-8 minutes (stand mixer) or 8-10 minutes (by hand)
- Oil bowl, place dough, cover and let rise 1-1.5 hours until doubled
- Punch down, divide into 8 balls, cover and rest 15-20 minutes
- Preheat tawa on medium-high or baking stone in oven at 250°C
- Pat ball into disc, stretch/roll into teardrop or oval about 18-20cm long, 3mm thick
- Place on hot tawa, bubbles appear in 30-45 seconds
- Flip when bottom has brown spots, cook other side until golden
- Optional: place briefly over direct gas flame for charring
- Immediately brush with butter-garlic-cilantro mix
- Keep stacked in covered container to stay soft
