Naan Bread

Ingredients

  • 2.5 cups bread flour or all-purpose flour
  • 0.33 cup warm water
  • 0.33 cup warm milk
  • 1.5 tsp instant yeast
  • 2 tsp sugar
  • 0.33 cup plain yogurt
  • 0.5 large egg (beaten)
  • 1 tsp salt
  • 1 tbsp oil
  • 2-3 tbsp melted butter or ghee for topping
  • 2 cloves garlic, minced
  • 2-3 tbsp fresh cilantro

Instructions

  1. Mix warm water and milk, sprinkle yeast and sugar, let stand 5-10 minutes until foamy
  2. Add 2 cups flour to foamy mixture, mix and rest 10-15 minutes
  3. Add yogurt, egg, salt, and oil
  4. Gradually add remaining flour, mix until soft, slightly sticky dough
  5. Knead 6-8 minutes (stand mixer) or 8-10 minutes (by hand)
  6. Oil bowl, place dough, cover and let rise 1-1.5 hours until doubled
  7. Punch down, divide into 8 balls, cover and rest 15-20 minutes
  8. Preheat tawa on medium-high or baking stone in oven at 250°C
  9. Pat ball into disc, stretch/roll into teardrop or oval about 18-20cm long, 3mm thick
  10. Place on hot tawa, bubbles appear in 30-45 seconds
  11. Flip when bottom has brown spots, cook other side until golden
  12. Optional: place briefly over direct gas flame for charring
  13. Immediately brush with butter-garlic-cilantro mix
  14. Keep stacked in covered container to stay soft
