Nigiri Sushi (Ebi)

Ingredients

  • 2 cups sushi rice
  • 3 tbsp rice vinegar
  • 1 tbsp sugar
  • 1 tsp salt
  • 12 pieces large shrimp
  • 1 sheet nori seaweed
  • 1 tsp wasabi
  • 3 tbsp soy sauce

Instructions

  1. Cook sushi rice and let cool slightly
  2. Mix rice vinegar, sugar, and salt; fold into rice
  3. Boil shrimp for 2 minutes until pink, chill
  4. Cut shrimp in half lengthwise
  5. Wet hands with vinegared water
  6. Form rice into oval pieces (about 1 tbsp each)
  7. Place shrimp on top, press gently
  8. Serve with wasabi and soy sauce
