Okonomiyaki (Japanese Savory Pancake)

Ingredients
- 1.5 cups all-purpose flour
- 1.5 cups water
- 2 whole eggs
- 0.5 cup dashi stock
- 0.5 tsp baking soda
- 4 cups cabbage
- 8 oz pork belly
- 8 oz shrimp
- 2 stalks scallions
- 2 tbsp vegetable oil
- 0.5 cup okonomiyaki sauce
- 2 tbsp bonito flakes
- 1 tsp aonori (seaweed powder)
- 3 tbsp mayo
Instructions
- Whisk together flour, water, eggs, and dashi
- Add baking soda
- Chop cabbage finely
- Slice pork belly thinly
- Fold cabbage and scallions into batter
- Heat oil on griddle or large skillet
- Pour half of batter onto griddle to form large circle
- Arrange pork belly and shrimp on top
- Cook for 5-7 minutes until bottom is golden
- Using two spatulas, flip carefully
- Cook other side for 5 minutes
- Drizzle with okonomiyaki sauce and mayo
- Sprinkle bonito flakes and aonori
- Slice into 6-8 pieces
- Serve hot
