Okonomiyaki (Japanese Savory Pancake)

Ingredients

  • 1.5 cups all-purpose flour
  • 1.5 cups water
  • 2 whole eggs
  • 0.5 cup dashi stock
  • 0.5 tsp baking soda
  • 4 cups cabbage
  • 8 oz pork belly
  • 8 oz shrimp
  • 2 stalks scallions
  • 2 tbsp vegetable oil
  • 0.5 cup okonomiyaki sauce
  • 2 tbsp bonito flakes
  • 1 tsp aonori (seaweed powder)
  • 3 tbsp mayo

Instructions

  1. Whisk together flour, water, eggs, and dashi
  2. Add baking soda
  3. Chop cabbage finely
  4. Slice pork belly thinly
  5. Fold cabbage and scallions into batter
  6. Heat oil on griddle or large skillet
  7. Pour half of batter onto griddle to form large circle
  8. Arrange pork belly and shrimp on top
  9. Cook for 5-7 minutes until bottom is golden
  10. Using two spatulas, flip carefully
  11. Cook other side for 5 minutes
  12. Drizzle with okonomiyaki sauce and mayo
  13. Sprinkle bonito flakes and aonori
  14. Slice into 6-8 pieces
  15. Serve hot
