Ingredients
- 500 ml Heavy cream
- 100 ml Whole milk
- 1 whole Vanilla bean (or extract)
- 60 g Sugar
- 5 g Gelatin sheets
- 50 ml Water (cold)
- 200 g Raspberries or berries
Instructions
- Soak gelatin sheets in cold water for 2-3 minutes until softened.
- Heat cream, milk, and sugar in saucepan over medium heat.
- Split vanilla bean and scrape seeds into cream mixture.
- Heat until sugar dissolves (do not boil).
- Remove from heat, add softened gelatin, stir until completely dissolved.
- Strain mixture through fine sieve.
- Divide among serving glasses or ramekins.
- Refrigerate for at least 6 hours (preferably overnight) until set.
- Serve chilled, topped with fresh berries or berry compote.
