Panna Cotta

Ingredients

  • 500 ml Heavy cream
  • 100 ml Whole milk
  • 1 whole Vanilla bean (or extract)
  • 60 g Sugar
  • 5 g Gelatin sheets
  • 50 ml Water (cold)
  • 200 g Raspberries or berries

Instructions

  1. Soak gelatin sheets in cold water for 2-3 minutes until softened.
  2. Heat cream, milk, and sugar in saucepan over medium heat.
  3. Split vanilla bean and scrape seeds into cream mixture.
  4. Heat until sugar dissolves (do not boil).
  5. Remove from heat, add softened gelatin, stir until completely dissolved.
  6. Strain mixture through fine sieve.
  7. Divide among serving glasses or ramekins.
  8. Refrigerate for at least 6 hours (preferably overnight) until set.
  9. Serve chilled, topped with fresh berries or berry compote.
