Ingredients

  • 1500 g rooster or chicken
  • 3 large onion
  • 3 cloves garlic
  • 3 tbsp tomato paste
  • 250 ml red wine
  • 5 tbsp olive oil
  • 1 whole cinnamon stick
  • 2 whole clove
  • 1 whole bay leaf
  • 1 tsp salt
  • 0.5 tsp black pepper

Instructions

  1. Cut chicken into large pieces
  2. Heat olive oil in large pot, brown chicken pieces, set aside
  3. Sauté diced onion and garlic until soft
  4. Add tomato paste, stir for 1 minute
  5. Pour red wine into pot, scrape up any browned bits
  6. Return chicken to pot with cinnamon, clove, and bay leaf
  7. Bring to simmer, reduce heat and cook covered for 45 minutes
  8. Chicken should be very tender and sauce rich and thick
  9. Season with salt and pepper
  10. Remove spices before serving
  11. Serve over pasta or rice
