Ingredients
- 1500 g rooster or chicken
- 3 large onion
- 3 cloves garlic
- 3 tbsp tomato paste
- 250 ml red wine
- 5 tbsp olive oil
- 1 whole cinnamon stick
- 2 whole clove
- 1 whole bay leaf
- 1 tsp salt
- 0.5 tsp black pepper
Instructions
- Cut chicken into large pieces
- Heat olive oil in large pot, brown chicken pieces, set aside
- Sauté diced onion and garlic until soft
- Add tomato paste, stir for 1 minute
- Pour red wine into pot, scrape up any browned bits
- Return chicken to pot with cinnamon, clove, and bay leaf
- Bring to simmer, reduce heat and cook covered for 45 minutes
- Chicken should be very tender and sauce rich and thick
- Season with salt and pepper
- Remove spices before serving
- Serve over pasta or rice
