Ingredients

  • 300 g all-purpose flour
  • 1 whole egg
  • 150 ml water
  • 0.5 tsp salt
  • 300 g ground pork
  • 200 g ground beef
  • 1 medium onion
  • 0.5 tsp black pepper
  • 1500 ml beef broth
  • 100 g sour cream
  • 2 tbsp fresh dill

Instructions

  1. Make dough: combine flour, egg, water, and salt, knead for 8-10 minutes until smooth
  2. Wrap in plastic and rest for 30 minutes
  3. Make filling: finely mince onion, combine with ground pork and beef, add salt and pepper
  4. Roll dough thin on floured surface, cut into 5cm circles
  5. Place 1 tsp filling in center of each circle
  6. Fold into semicircle, then bring edges together to form tiny pouch shape
  7. Place pelmeni on floured tray, chill for at least 30 minutes
  8. Bring beef broth to boil
  9. Carefully drop pelmeni into boiling broth, stir gently to prevent sticking
  10. They will sink, then float to surface after 1-2 minutes
  11. Cook for 3-4 more minutes after surfacing until tender
  12. Serve in broth with dollop of sour cream and fresh dill
