Ingredients
- 300 g all-purpose flour
- 1 whole egg
- 150 ml water
- 0.5 tsp salt
- 300 g ground pork
- 200 g ground beef
- 1 medium onion
- 0.5 tsp black pepper
- 1500 ml beef broth
- 100 g sour cream
- 2 tbsp fresh dill
Instructions
- Make dough: combine flour, egg, water, and salt, knead for 8-10 minutes until smooth
- Wrap in plastic and rest for 30 minutes
- Make filling: finely mince onion, combine with ground pork and beef, add salt and pepper
- Roll dough thin on floured surface, cut into 5cm circles
- Place 1 tsp filling in center of each circle
- Fold into semicircle, then bring edges together to form tiny pouch shape
- Place pelmeni on floured tray, chill for at least 30 minutes
- Bring beef broth to boil
- Carefully drop pelmeni into boiling broth, stir gently to prevent sticking
- They will sink, then float to surface after 1-2 minutes
- Cook for 3-4 more minutes after surfacing until tender
- Serve in broth with dollop of sour cream and fresh dill
