Pho Ga (Vietnamese Chicken Noodle Soup)

Ingredients

  • 1 whole whole chicken
  • 2 whole onion
  • 4 inches ginger
  • 1 whole cinnamon stick
  • 4 pieces star anise
  • 1 tsp coriander seeds
  • 2 pieces cloves
  • 3 tbsp fish sauce
  • 1 tbsp sugar
  • 1 tsp salt
  • 3 quarts water
  • 1 lb rice noodles
  • 1 bunch fresh herbs
  • 1 cup bean sprouts
  • 2 whole lime
  • 2 whole jalapeños

Instructions

  1. Char onion and ginger under broiler
  2. Toast spices in dry pan for 1 minute
  3. Place chicken in pot with water
  4. Bring to boil and skim foam
  5. Add charred onion and ginger
  6. Add toasted spices in cheesecloth
  7. Simmer for 1.5 hours until chicken is very tender
  8. Remove chicken and shred meat
  9. Strain broth
  10. Return broth to pot
  11. Add fish sauce and sugar
  12. Cook rice noodles separately
  13. Warm bowls with hot broth
  14. Divide noodles among bowls
  15. Top with shredded chicken
  16. Pour hot broth over noodles
  17. Serve with herbs, sprouts, lime, and jalapeños
