Pho (Vietnamese Beef Noodle Soup)

Ingredients
- 2 lbs beef bones
- 1.5 lbs beef brisket
- 1 large onion
- 3 inches ginger
- 1 whole cinnamon stick
- 4 pieces star anise
- 1 tsp coriander seeds
- 2 pieces cloves
- 1 pod black cardamom
- 3 tbsp fish sauce
- 1 tbsp sugar
- 1 tsp salt
- 4 quarts water
- 1 lb rice noodles
- 1 bunch each fresh herbs (basil, cilantro, mint)
- 1 cup bean sprouts
- 2 whole lime
- 3 stalks scallions
- 2 whole jalapeños
Instructions
- Char onion and ginger under broiler until blackened
- Toast spices in dry pan for 1 minute
- Blanch bones and brisket in boiling water for 5 minutes
- Rinse under cold water
- Add cleaned bones and brisket to fresh water
- Add charred onion and ginger
- Add toasted spices in cheesecloth bundle
- Bring to boil, then reduce to simmer
- Simmer for 3-4 hours
- Add fish sauce and sugar
- Strain broth through fine sieve
- Slice brisket thinly
- Cook rice noodles according to package directions
- Warm bowls with hot broth
- Divide noodles among bowls
- Top with brisket slices
- Pour hot broth over noodles
- Serve with fresh herbs, sprouts, lime, and jalapeños
- Season with additional fish sauce to taste
