Plain Paratha

Ingredients

  • 2 cups whole wheat flour (atta)
  • 1 tsp salt
  • 1-2 tbsp oil or ghee
  • 0.75-1 cup warm water
  • Ghee or oil for frying

Instructions

  1. Mix flour and salt in a bowl
  2. Add oil/ghee and rub into flour
  3. Gradually add warm water, mixing and kneading to form soft, smooth dough
  4. Knead 5-7 minutes
  5. Cover with damp cloth and rest 20-30 minutes
  6. Divide into 8 equal balls, keep covered
  7. Roll ball lightly into thin circle (~15cm)
  8. Spread 0.5 tsp ghee over rolled disc
  9. Sprinkle dry flour, fold in half to semi-circle, then again to form triangle
  10. Dust lightly and roll gently to ~18cm, maintaining triangular shape
  11. Heat tawa on medium to medium-high
  12. Place paratha on hot tawa, cook 20-30 seconds
  13. Flip, spread 1-2 tsp ghee around edges and on top
  14. When brown spots appear, flip again and press edges with spatula
  15. Cook until both sides are golden with crisp layers
  16. Serve hot with butter, yogurt, and pickle
