Ingredients
- 2 cups whole wheat flour (atta)
- 1 tsp salt
- 1-2 tbsp oil or ghee
- 0.75-1 cup warm water
- Ghee or oil for frying
Instructions
- Mix flour and salt in a bowl
- Add oil/ghee and rub into flour
- Gradually add warm water, mixing and kneading to form soft, smooth dough
- Knead 5-7 minutes
- Cover with damp cloth and rest 20-30 minutes
- Divide into 8 equal balls, keep covered
- Roll ball lightly into thin circle (~15cm)
- Spread 0.5 tsp ghee over rolled disc
- Sprinkle dry flour, fold in half to semi-circle, then again to form triangle
- Dust lightly and roll gently to ~18cm, maintaining triangular shape
- Heat tawa on medium to medium-high
- Place paratha on hot tawa, cook 20-30 seconds
- Flip, spread 1-2 tsp ghee around edges and on top
- When brown spots appear, flip again and press edges with spatula
- Cook until both sides are golden with crisp layers
- Serve hot with butter, yogurt, and pickle
