Ingredients

  • 2 cups whole wheat flour
  • 1 tsp salt
  • 1-2 tbsp oil or ghee
  • 2 tbsp semolina (sooji/rava), optional
  • 0.75 cup water
  • Oil for deep frying

Instructions

  1. Mix wheat flour, salt, and semolina if using
  2. Add oil/ghee and rub into flour
  3. Add water gradually and knead into stiff, smooth dough
  4. Rest covered 10-15 minutes
  5. Make small lemon-sized balls
  6. Lightly oil surface and roll each ball into 3-4 inch disc
  7. Heat oil to medium-high, test with small dough piece - should rise quickly
  8. Slide in poori, as it comes up, gently press top with slotted spoon so it puffs
  9. Flip and fry until light golden, not dark
  10. Remove to paper/tissue to drain
  11. Serve hot with bhaji, chole, or halwa
