Ingredients
- 2 cups whole wheat flour
- 1 tsp salt
- 1-2 tbsp oil or ghee
- 2 tbsp semolina (sooji/rava), optional
- 0.75 cup water
- Oil for deep frying
Instructions
- Mix wheat flour, salt, and semolina if using
- Add oil/ghee and rub into flour
- Add water gradually and knead into stiff, smooth dough
- Rest covered 10-15 minutes
- Make small lemon-sized balls
- Lightly oil surface and roll each ball into 3-4 inch disc
- Heat oil to medium-high, test with small dough piece - should rise quickly
- Slide in poori, as it comes up, gently press top with slotted spoon so it puffs
- Flip and fry until light golden, not dark
- Remove to paper/tissue to drain
- Serve hot with bhaji, chole, or halwa
