Potato and Cheese Croquettes

Ingredients
- 600 g potato
- 100 g cheddar cheese
- 1 whole egg
- 100 g bread crumbs
- 30 g butter
- 2 tbsp parsley
- 0.5 tsp salt
- 0.25 tsp black pepper
- 300 ml vegetable oil
Instructions
- Boil potatoes until tender, peel and mash while still warm
- Mix mashed potatoes with butter, grated cheese, and chopped parsley
- Season with salt and pepper
- Cool mixture until handleable
- Form into cork-shaped croquettes
- Dip in beaten egg, coat with bread crumbs
- Heat oil to 170°C in deep pan
- Fry croquettes until golden brown, about 2-3 minutes
- Drain on paper towels
- Serve hot with sour cream
