Potato and Cheese Croquettes

Ingredients

  • 600 g potato
  • 100 g cheddar cheese
  • 1 whole egg
  • 100 g bread crumbs
  • 30 g butter
  • 2 tbsp parsley
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 300 ml vegetable oil

Instructions

  1. Boil potatoes until tender, peel and mash while still warm
  2. Mix mashed potatoes with butter, grated cheese, and chopped parsley
  3. Season with salt and pepper
  4. Cool mixture until handleable
  5. Form into cork-shaped croquettes
  6. Dip in beaten egg, coat with bread crumbs
  7. Heat oil to 170°C in deep pan
  8. Fry croquettes until golden brown, about 2-3 minutes
  9. Drain on paper towels
  10. Serve hot with sour cream
