Pounded Yam Fufu

Ingredients

  • 3 pounds African yams (Ghana yams or puna yams)
  • 3 quarts Water for boiling
  • 1 tsp Salt

Instructions

  1. Peel yams and cut into large chunks.
  2. Rinse immediately and leave in cool water until ready to cook to prevent discoloration.
  3. Bring a large pot of water to boil and add salt.
  4. Add yam chunks and boil until very tender (approximately 30 minutes, checking every 10 minutes).
  5. Drain thoroughly in a colander and reserve some cooking water.
  6. Transfer boiled yams to a food processor.
  7. Pulse for 20-30 second intervals, checking smoothness between pulses.
  8. Move yam puree around with a spoon between pulses to ensure even blending.
  9. Add 1-2 tablespoons of reserved cooking water as needed until you achieve a stretchy, soft, dough-like consistency with no lumps.
  10. Serve immediately with Nigerian soups like Ogbono Soup or Okro Soup.
