Ingredients
- 3 pounds African yams (Ghana yams or puna yams)
- 3 quarts Water for boiling
- 1 tsp Salt
Instructions
- Peel yams and cut into large chunks.
- Rinse immediately and leave in cool water until ready to cook to prevent discoloration.
- Bring a large pot of water to boil and add salt.
- Add yam chunks and boil until very tender (approximately 30 minutes, checking every 10 minutes).
- Drain thoroughly in a colander and reserve some cooking water.
- Transfer boiled yams to a food processor.
- Pulse for 20-30 second intervals, checking smoothness between pulses.
- Move yam puree around with a spoon between pulses to ensure even blending.
- Add 1-2 tablespoons of reserved cooking water as needed until you achieve a stretchy, soft, dough-like consistency with no lumps.
- Serve immediately with Nigerian soups like Ogbono Soup or Okro Soup.
