Ingredients
- Roast duck meat, sliced or shredded: 150-200g
- Fresh or dried wheat noodles (egg noodles): 200g
- Garlic, minced: 1-2 cloves
- Ginger, minced: 1 tsp
- Duck fat or neutral oil: 2-3 tbsp
- Light soy sauce: 2-3 tbsp
- Dark soy sauce: 1-2 tsp
- Sugar: 1-2 tsp
- Shaoxing wine: 1-2 tbsp
- Stock or noodle cooking water: splash
- Hoisin or sweet bean sauce: 1 spoon optional
- Green vegetables (bok choy, choy sum, napa): blanched
- Scallion, sliced: for serving
- Salt and white pepper: to taste
Instructions
- Cook noodles according to package directions, drain, reserve some cooking water
- Heat duck fat/oil in wok, add garlic and ginger, fry until fragrant
- Add roast duck meat, quickly stir-fry to heat through
- Season with light soy, dark soy, sugar, and Shaoxing wine
- Add splash of stock or noodle water, reduce briefly to glossy sauce
- Combine noodles with sauce and duck, toss well so noodles coated
- Serve topped with blanched greens and scallion
- Optional: add hoisin or sweet bean sauce for Peking duck flavor profile
