Salsa Española (Spanish Tomato Sauce)

Ingredients
- 1000 g Ripe tomatoes
- 1 large Onion
- 4 cloves Garlic
- 50 ml Olive oil
- 2 tbsp Tomato paste
- 1 tbsp Red wine vinegar
- 1 tsp Sugar
- 1 whole Bay leaf
- 1 tsp Fresh oregano
- 1 to taste Salt and pepper
Instructions
- Blanch tomatoes in boiling water for 1 minute, cool in ice bath.
- Peel and chop tomatoes, discarding seeds.
- Heat olive oil in large pan, sauté diced onion and garlic until soft (3 minutes).
- Add tomato paste, cook for 1 minute.
- Add chopped tomatoes, vinegar, sugar, bay leaf, and oregano.
- Simmer uncovered for 30-40 minutes, stirring occasionally.
- Season with salt and pepper.
- For smooth sauce, blend; for chunky sauce, leave as is.
- Use for pasta, rice, or as accompaniment to meat or fish.
