Salsa Española (Spanish Tomato Sauce)

Ingredients

  • 1000 g Ripe tomatoes
  • 1 large Onion
  • 4 cloves Garlic
  • 50 ml Olive oil
  • 2 tbsp Tomato paste
  • 1 tbsp Red wine vinegar
  • 1 tsp Sugar
  • 1 whole Bay leaf
  • 1 tsp Fresh oregano
  • 1 to taste Salt and pepper

Instructions

  1. Blanch tomatoes in boiling water for 1 minute, cool in ice bath.
  2. Peel and chop tomatoes, discarding seeds.
  3. Heat olive oil in large pan, sauté diced onion and garlic until soft (3 minutes).
  4. Add tomato paste, cook for 1 minute.
  5. Add chopped tomatoes, vinegar, sugar, bay leaf, and oregano.
  6. Simmer uncovered for 30-40 minutes, stirring occasionally.
  7. Season with salt and pepper.
  8. For smooth sauce, blend; for chunky sauce, leave as is.
  9. Use for pasta, rice, or as accompaniment to meat or fish.
