Samgyetang (Korean Ginseng Chicken Soup)

Ingredients
- 1 whole whole young chicken
- 3 pieces ginseng
- 5 pieces red dates (jujubes)
- 10 pieces ginkgo nuts
- 2 tbsp pine nuts
- 4 cloves garlic
- 1 inch ginger
- 3 stalks scallions
- 3 quarts water
- 1 tsp salt
- 0.5 tsp black pepper
- 0.5 cup rice
Instructions
- Stuff chicken with ginseng, red dates, ginkgo nuts, half the scallions, and garlic
- Tie chicken legs together
- Place chicken in pot with water
- Bring to boil and skim impurities
- Add crushed ginger
- Simmer for 45 minutes to 1 hour until chicken is very tender
- Remove chicken and shred meat, discarding bones
- Return meat to broth
- Season with salt and pepper
- Serve in bowls with rice on side
- Garnish with remaining scallions and pine nuts
