Samgyetang (Korean Ginseng Chicken Soup)

Ingredients

  • 1 whole whole young chicken
  • 3 pieces ginseng
  • 5 pieces red dates (jujubes)
  • 10 pieces ginkgo nuts
  • 2 tbsp pine nuts
  • 4 cloves garlic
  • 1 inch ginger
  • 3 stalks scallions
  • 3 quarts water
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 cup rice

Instructions

  1. Stuff chicken with ginseng, red dates, ginkgo nuts, half the scallions, and garlic
  2. Tie chicken legs together
  3. Place chicken in pot with water
  4. Bring to boil and skim impurities
  5. Add crushed ginger
  6. Simmer for 45 minutes to 1 hour until chicken is very tender
  7. Remove chicken and shred meat, discarding bones
  8. Return meat to broth
  9. Season with salt and pepper
  10. Serve in bowls with rice on side
  11. Garnish with remaining scallions and pine nuts
