Saudi Jareesh (Cracked Wheat Porridge)

Ingredients
- 2 cups Jareesh (cracked wheat, 2-4 mm size)
- 1 kg Chicken or lamb, cut into chunks
- 3 tbsp Ghee or oil
- 2 whole Onions, finely chopped
- 6 cups Chicken or meat broth
- 1.5 tsp Salt
- 0.5 tsp Black pepper
- 0.5 tsp Turmeric
- 0.5 tsp Ground coriander
Instructions
- Heat ghee or oil in large pot over medium heat. Add chopped onions and sauté until soft and golden.
- Add meat chunks and brown on all sides.
- Add broth and bring to boil. Reduce heat and simmer meat until nearly tender (about 30-40 minutes).
- Slowly add jareesh to broth while stirring constantly to avoid lumps forming.
- Add salt, pepper, turmeric, and coriander.
- Continue cooking and stirring over medium-low heat for 20-30 minutes until jareesh is cooked through, very soft, and porridge reaches a thick, creamy consistency.
- Adjust consistency with more broth if too thick, or continue cooking if too thin.
- Taste and adjust seasonings.
- Serve hot in bowls, topped with meat pieces and their cooking liquid.
