Scallops with Brown Butter

Ingredients
- 8 pieces (50g each) Large sea scallops (dry)
- 80 g Butter
- 2 tbsp All-purpose flour
- 2 tbsp Lemon juice
- 2 tbsp Fresh parsley
- 1 to taste Salt and white pepper
Instructions
- Pat scallops dry with paper towels (critical for browning).
- Season scallops with salt and white pepper.
- Lightly dust with flour.
- Heat 30g butter in large skillet over high heat.
- When butter foams and turns nut-brown, carefully place scallops in pan.
- Cook for 2-3 minutes per side until golden brown and just cooked through (do not overcook).
- Transfer scallops to serving plate.
- Add remaining 50g butter to pan.
- Heat until nut-brown and fragrant (about 2 minutes).
- Remove from heat, add lemon juice and parsley.
- Pour brown butter sauce over scallops.
- Serve immediately with vegetables or risotto.
