Sesame Noodles (Ma You Liang Mian)

Ingredients

  • Wheat noodles: 250g
  • Chinese sesame paste: 3 tbsp
  • Chinkiang vinegar: 1.5-2 tbsp
  • Light soy sauce: 1.5 tbsp
  • Sugar: 1 tsp
  • Sesame oil: 1 tbsp
  • Chili oil: ½-1 tbsp optional
  • Garlic, minced: 2 cloves
  • Hot water: 3-4 tbsp (to thin paste)
  • Cucumber, julienned: ½ cup
  • Carrot, julienned: ½ cup
  • Scallions, sliced: 1-2 stalks
  • Roasted peanuts, crushed: optional

Instructions

  1. Cook noodles until just done, rinse under cold water, drain well
  2. In bowl, mix sesame paste with hot water until creamy and pourable
  3. Add vinegar, soy sauce, sugar, sesame oil, chili oil optional, garlic
  4. Mix until smooth and well combined
  5. Toss cooked noodles with sesame sauce until well coated
  6. Arrange in serving bowls
  7. Top with cucumber, carrot, scallions, crushed peanuts
  8. Serve at room temperature or chilled
