Sesame Noodles (Ma You Liang Mian)

Ingredients
- Wheat noodles: 250g
- Chinese sesame paste: 3 tbsp
- Chinkiang vinegar: 1.5-2 tbsp
- Light soy sauce: 1.5 tbsp
- Sugar: 1 tsp
- Sesame oil: 1 tbsp
- Chili oil: ½-1 tbsp optional
- Garlic, minced: 2 cloves
- Hot water: 3-4 tbsp (to thin paste)
- Cucumber, julienned: ½ cup
- Carrot, julienned: ½ cup
- Scallions, sliced: 1-2 stalks
- Roasted peanuts, crushed: optional
Instructions
- Cook noodles until just done, rinse under cold water, drain well
- In bowl, mix sesame paste with hot water until creamy and pourable
- Add vinegar, soy sauce, sugar, sesame oil, chili oil optional, garlic
- Mix until smooth and well combined
- Toss cooked noodles with sesame sauce until well coated
- Arrange in serving bowls
- Top with cucumber, carrot, scallions, crushed peanuts
- Serve at room temperature or chilled
