Ingredients
- 400 g tomato
- 2 whole bell pepper
- 1 medium onion
- 2 cloves garlic
- 4 whole eggs
- 4 tbsp olive oil
- 1 tsp cumin
- 1 tsp paprika
- 0.5 tsp salt
- 0.25 tsp black pepper
- 2 tbsp parsley
Instructions
- Dice onion and bell pepper, mince garlic
- Dice tomato or use canned tomato, removing seeds
- Heat olive oil in deep skillet over medium heat
- Sauté onion, bell pepper, and garlic until soft
- Add diced tomato, cumin, and paprika
- Simmer for 10-15 minutes until sauce thickens
- Make 4 wells in sauce with back of spoon
- Crack one egg into each well
- Cover and cook for 5-7 minutes until egg whites set but yolks remain runny
- Season with salt and pepper, garnish with parsley
- Serve with crusty bread
