Shakshuka

Ingredients

  • 400 g tomato
  • 2 whole bell pepper
  • 1 medium onion
  • 2 cloves garlic
  • 4 whole eggs
  • 4 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp paprika
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 tbsp parsley

Instructions

  1. Dice onion and bell pepper, mince garlic
  2. Dice tomato or use canned tomato, removing seeds
  3. Heat olive oil in deep skillet over medium heat
  4. Sauté onion, bell pepper, and garlic until soft
  5. Add diced tomato, cumin, and paprika
  6. Simmer for 10-15 minutes until sauce thickens
  7. Make 4 wells in sauce with back of spoon
  8. Crack one egg into each well
  9. Cover and cook for 5-7 minutes until egg whites set but yolks remain runny
  10. Season with salt and pepper, garnish with parsley
  11. Serve with crusty bread
