Ingredients
- Cold cooked rice: 3 cups
- Eggs: 2, beaten with pinch of salt
- Scallions, finely sliced: 2-3
- Shrimp, diced char siu, or ham: ½ cup optional
- Neutral oil: 2-3 tbsp
- Light soy sauce: 1-1.5 tbsp
- Shaoxing wine: ½ tsp optional
- Sugar: ¼ tsp
- Salt: to taste
- White pepper: to taste
- Sesame oil: optional few drops
Instructions
- Break up cold rice with hands or fork to remove clumps
- Heat wok or large pan over high heat until very hot, add 1 tbsp oil
- Pour in beaten eggs, scramble just until mostly set but still soft, remove
- Add remaining oil, stir-fry shrimp/ham/char siu if using until cooked or fragrant
- Add rice, stir-fry on high heat, pressing and tossing until hot, separated, and sizzling
- Add soy sauce, Shaoxing wine, sugar, salt, and white pepper
- Toss quickly so rice absorbs seasonings evenly
- Return eggs and add scallions, toss briefly
- Finish with sesame oil if desired and serve hot
