Shish Kebab

Ingredients

  • 800 g lamb shoulder
  • 2 large onion
  • 2 whole bell pepper
  • 2 whole tomato
  • 6 tbsp olive oil
  • 4 tbsp lemon juice
  • 3 cloves garlic
  • 1 tsp paprika
  • 0.5 tsp cumin
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 8 whole metal skewers

Instructions

  1. Cut lamb into 3cm cubes
  2. Whisk together olive oil, lemon juice, minced garlic, paprika, cumin, salt, and pepper
  3. Marinate lamb for at least 4 hours, preferably overnight
  4. Cut onions into large chunks, peppers and tomatoes into quarters
  5. Thread lamb, onions, peppers, and tomatoes onto metal skewers
  6. Grill over hot charcoal or high heat for 12-15 minutes, turning every 2-3 minutes
  7. Meat should be cooked through with charred exterior
  8. Serve with rice pilaf, grilled vegetables, and fresh bread
