Ingredients
- 4 quarts chicken broth
- 5 tbsp soy sauce
- 2 tbsp mirin
- 2 tbsp sake
- 1 inch ginger
- 3 cloves garlic
- 3 stalks scallions
- 1 lb ramen noodles
- 4 pieces soft-boiled eggs
- 2 breasts grilled chicken breast
- 8 oz bamboo shoots
- 2 sheets nori sheets
- 8 oz mushrooms
- 2 tbsp sesame seeds
Instructions
- Heat chicken broth in large pot
- Add soy sauce, mirin, and sake
- Smash ginger and garlic, add to broth
- Simmer for 15 minutes
- Slice cooked chicken breast
- Cook ramen noodles separately
- Sauté mushrooms until golden
- Strain broth and return to pot
- Warm bowls with hot broth
- Divide noodles among bowls
- Pour hot broth over noodles
- Top with chicken, egg, bamboo shoots, mushrooms, and scallions
- Sprinkle sesame seeds and nori
- Serve immediately
