Shoyu Ramen

Ingredients

  • 4 quarts chicken broth
  • 5 tbsp soy sauce
  • 2 tbsp mirin
  • 2 tbsp sake
  • 1 inch ginger
  • 3 cloves garlic
  • 3 stalks scallions
  • 1 lb ramen noodles
  • 4 pieces soft-boiled eggs
  • 2 breasts grilled chicken breast
  • 8 oz bamboo shoots
  • 2 sheets nori sheets
  • 8 oz mushrooms
  • 2 tbsp sesame seeds

Instructions

  1. Heat chicken broth in large pot
  2. Add soy sauce, mirin, and sake
  3. Smash ginger and garlic, add to broth
  4. Simmer for 15 minutes
  5. Slice cooked chicken breast
  6. Cook ramen noodles separately
  7. Sauté mushrooms until golden
  8. Strain broth and return to pot
  9. Warm bowls with hot broth
  10. Divide noodles among bowls
  11. Pour hot broth over noodles
  12. Top with chicken, egg, bamboo shoots, mushrooms, and scallions
  13. Sprinkle sesame seeds and nori
  14. Serve immediately
