Shrimp in Lobster Sauce

Ingredients

  • Shrimp, peeled: 300g
  • Lobster sauce or oyster sauce: 2 tbsp
  • Light soy sauce: 1.5 tbsp
  • Shaoxing wine: 1 tbsp
  • Sugar: ½ tsp
  • Garlic, minced: 3 cloves
  • Ginger, minced: 1 tsp
  • Scallions, chopped: 2
  • Egg: 1, lightly beaten
  • Stock: ¼ cup
  • Cornstarch: 1 tsp
  • Water: 2 tbsp
  • Oil: 2-3 tbsp for cooking

Instructions

  1. Heat wok, add oil, stir-fry garlic and ginger briefly
  2. Add shrimp, stir-fry until starting to turn pink
  3. Add lobster sauce, soy sauce, Shaoxing wine, sugar
  4. Pour in stock, bring to quick simmer
  5. Mix cornstarch with water, stir in gradually until thickened
  6. Drizzle beaten egg in slow stream while stirring to form ribbons
  7. Add scallions, toss quickly
  8. Serve immediately over steamed rice
