Ingredients
- Shrimp, peeled: 300g
- Lobster sauce or oyster sauce: 2 tbsp
- Light soy sauce: 1.5 tbsp
- Shaoxing wine: 1 tbsp
- Sugar: ½ tsp
- Garlic, minced: 3 cloves
- Ginger, minced: 1 tsp
- Scallions, chopped: 2
- Egg: 1, lightly beaten
- Stock: ¼ cup
- Cornstarch: 1 tsp
- Water: 2 tbsp
- Oil: 2-3 tbsp for cooking
Instructions
- Heat wok, add oil, stir-fry garlic and ginger briefly
- Add shrimp, stir-fry until starting to turn pink
- Add lobster sauce, soy sauce, Shaoxing wine, sugar
- Pour in stock, bring to quick simmer
- Mix cornstarch with water, stir in gradually until thickened
- Drizzle beaten egg in slow stream while stirring to form ribbons
- Add scallions, toss quickly
- Serve immediately over steamed rice
