Soffritto (Spanish Stew Base)

Ingredients
- 2 large Onion
- 6 cloves Garlic
- 1 whole Red bell pepper
- 2 medium Tomato
- 80 ml Olive oil
- 1 tbsp Paprika
- 0.5 g Saffron threads (optional)
- 1 to taste Salt and pepper
Instructions
- Dice onion, garlic, bell pepper, and tomato finely.
- Heat olive oil in large, heavy pot over medium heat.
- Add diced onion and garlic, cook slowly for 5 minutes until softened.
- Add bell pepper, continue cooking for 5 minutes.
- Add diced tomato and paprika, stir well.
- If using saffron, crumble it in.
- Cook over medium heat for 15-20 minutes, stirring occasionally, until mixture is thick and deeply colored.
- Season with salt and pepper.
- Use as base for stews, paella, or other Spanish dishes.
- Store in refrigerator for up to 5 days, or freeze for later use.
