Soffritto (Spanish Stew Base)

Ingredients

  • 2 large Onion
  • 6 cloves Garlic
  • 1 whole Red bell pepper
  • 2 medium Tomato
  • 80 ml Olive oil
  • 1 tbsp Paprika
  • 0.5 g Saffron threads (optional)
  • 1 to taste Salt and pepper

Instructions

  1. Dice onion, garlic, bell pepper, and tomato finely.
  2. Heat olive oil in large, heavy pot over medium heat.
  3. Add diced onion and garlic, cook slowly for 5 minutes until softened.
  4. Add bell pepper, continue cooking for 5 minutes.
  5. Add diced tomato and paprika, stir well.
  6. If using saffron, crumble it in.
  7. Cook over medium heat for 15-20 minutes, stirring occasionally, until mixture is thick and deeply colored.
  8. Season with salt and pepper.
  9. Use as base for stews, paella, or other Spanish dishes.
  10. Store in refrigerator for up to 5 days, or freeze for later use.
