Sopa de Peixe (Greek Fish Soup)

Ingredients
- 600 g white fish
- 1000 ml fish stock
- 2 medium onion
- 1 whole fennel bulb
- 1 medium carrot
- 3 tbsp lemon juice
- 3 tbsp olive oil
- 1 tsp salt
- 0.5 tsp white pepper
- 2 tbsp parsley
Instructions
- Dice onion, fennel, and carrot
- Heat olive oil in pot, sauté onion and fennel until soft
- Add carrot and fish stock, simmer for 10 minutes
- Cut fish into chunks, add to pot
- Simmer gently for 8-10 minutes until fish is cooked through
- Add lemon juice, season with salt and white pepper
- Serve hot, garnished with fresh parsley and crusty bread
