Sopa de Peixe (Greek Fish Soup)

Ingredients

  • 600 g white fish
  • 1000 ml fish stock
  • 2 medium onion
  • 1 whole fennel bulb
  • 1 medium carrot
  • 3 tbsp lemon juice
  • 3 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp white pepper
  • 2 tbsp parsley

Instructions

  1. Dice onion, fennel, and carrot
  2. Heat olive oil in pot, sauté onion and fennel until soft
  3. Add carrot and fish stock, simmer for 10 minutes
  4. Cut fish into chunks, add to pot
  5. Simmer gently for 8-10 minutes until fish is cooked through
  6. Add lemon juice, season with salt and white pepper
  7. Serve hot, garnished with fresh parsley and crusty bread
