Ingredients
- 1500 ml chicken broth
- 300 g chicken breast
- 100 g rice
- 2 whole eggs
- 4 tbsp lemon juice
- 2 tbsp parsley
- 0.5 tsp salt
- 0.25 tsp white pepper
Instructions
- Bring chicken broth to boil, add whole chicken breast
- Simmer chicken until cooked through, about 15-20 minutes
- Remove chicken, cool, shred, and set aside
- Return broth to boil, add rice and cook until tender, about 15 minutes
- In bowl, whisk eggs with lemon juice until frothy
- Slowly add 1 cup hot broth to egg mixture while whisking constantly
- Pour egg mixture back into pot of broth while stirring continuously to prevent curdling
- Add shredded chicken back to soup, season with salt and white pepper
- Garnish with fresh parsley, serve immediately without boiling
