Soupa Avgolémono

Ingredients

  • 1500 ml chicken broth
  • 300 g chicken breast
  • 100 g rice
  • 2 whole eggs
  • 4 tbsp lemon juice
  • 2 tbsp parsley
  • 0.5 tsp salt
  • 0.25 tsp white pepper

Instructions

  1. Bring chicken broth to boil, add whole chicken breast
  2. Simmer chicken until cooked through, about 15-20 minutes
  3. Remove chicken, cool, shred, and set aside
  4. Return broth to boil, add rice and cook until tender, about 15 minutes
  5. In bowl, whisk eggs with lemon juice until frothy
  6. Slowly add 1 cup hot broth to egg mixture while whisking constantly
  7. Pour egg mixture back into pot of broth while stirring continuously to prevent curdling
  8. Add shredded chicken back to soup, season with salt and white pepper
  9. Garnish with fresh parsley, serve immediately without boiling
