Spaghetti Aglio e Olio

Ingredients

  • 400 g Spaghetti
  • 150 ml Extra virgin olive oil
  • 8 cloves Garlic
  • 0.5 tsp Red pepper flakes
  • 3 tbsp Fresh parsley
  • 1 tbsp Salt

Instructions

  1. Cook spaghetti in generously salted boiling water until al dente (7-9 minutes).
  2. Meanwhile, slice garlic thinly.
  3. Heat olive oil in a large skillet over medium heat.
  4. Add sliced garlic and red pepper flakes.
  5. Cook gently for 2-3 minutes until garlic is fragrant and lightly golden (do not brown).
  6. Reserve 1 cup pasta water before draining spaghetti.
  7. Add drained pasta to garlic oil pan.
  8. Toss well, adding pasta water a little at a time to create light emulsion.
  9. Remove from heat, stir in chopped parsley.
  10. Serve immediately with crushed red pepper flakes on the side.
