Spaghetti Aglio e Olio

Ingredients
- 400 g Spaghetti
- 150 ml Extra virgin olive oil
- 8 cloves Garlic
- 0.5 tsp Red pepper flakes
- 3 tbsp Fresh parsley
- 1 tbsp Salt
Instructions
- Cook spaghetti in generously salted boiling water until al dente (7-9 minutes).
- Meanwhile, slice garlic thinly.
- Heat olive oil in a large skillet over medium heat.
- Add sliced garlic and red pepper flakes.
- Cook gently for 2-3 minutes until garlic is fragrant and lightly golden (do not brown).
- Reserve 1 cup pasta water before draining spaghetti.
- Add drained pasta to garlic oil pan.
- Toss well, adding pasta water a little at a time to create light emulsion.
- Remove from heat, stir in chopped parsley.
- Serve immediately with crushed red pepper flakes on the side.
