Spanakopita

Ingredients

  • 500 g fresh spinach
  • 250 g feta cheese
  • 1 medium onion
  • 2 whole eggs
  • 3 tbsp dill
  • 10 sheets phyllo pastry
  • 100 g butter
  • 2 tbsp olive oil
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 tsp nutmeg

Instructions

  1. Wash spinach thoroughly, cook in large pot until wilted, squeeze out excess moisture
  2. Chop spinach finely and place in bowl
  3. Sauté finely diced onion in olive oil until soft, add to spinach
  4. Crumble feta cheese and add to spinach mixture
  5. Beat eggs and mix into spinach, add fresh dill, salt, pepper, and nutmeg
  6. Melt butter and mix with olive oil
  7. Brush 9x13 baking pan with butter mixture
  8. Layer 5 sheets of phyllo pastry, brushing each with butter
  9. Spread spinach filling evenly over phyllo
  10. Layer remaining 5 phyllo sheets on top, brushing each with butter
  11. Score top layer into squares, bake at 190°C for 35-40 mins until golden
