Ingredients
- 500 g fresh spinach
- 250 g feta cheese
- 1 medium onion
- 2 whole eggs
- 3 tbsp dill
- 10 sheets phyllo pastry
- 100 g butter
- 2 tbsp olive oil
- 0.5 tsp salt
- 0.25 tsp black pepper
- 0.25 tsp nutmeg
Instructions
- Wash spinach thoroughly, cook in large pot until wilted, squeeze out excess moisture
- Chop spinach finely and place in bowl
- Sauté finely diced onion in olive oil until soft, add to spinach
- Crumble feta cheese and add to spinach mixture
- Beat eggs and mix into spinach, add fresh dill, salt, pepper, and nutmeg
- Melt butter and mix with olive oil
- Brush 9x13 baking pan with butter mixture
- Layer 5 sheets of phyllo pastry, brushing each with butter
- Spread spinach filling evenly over phyllo
- Layer remaining 5 phyllo sheets on top, brushing each with butter
- Score top layer into squares, bake at 190°C for 35-40 mins until golden
