Stroganoff

Ingredients

  • 800 g beef sirloin
  • 3 medium onion
  • 300 g mushrooms
  • 300 g sour cream
  • 400 ml beef broth
  • 1 tbsp tomato paste
  • 50 g butter
  • 2 tbsp flour
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp paprika
  • 0.5 tsp mustard powder

Instructions

  1. Cut beef into thin strips about 3cm long
  2. Thinly slice onions and mushrooms
  3. Melt butter in large skillet over high heat
  4. Brown beef strips in batches, don't overcrowd, set aside
  5. In same skillet, sauté onions and mushrooms until golden
  6. Sprinkle flour over vegetables, stir for 1 minute
  7. Add beef broth, tomato paste, paprika, and mustard powder
  8. Return beef to skillet, reduce heat and simmer for 20-25 minutes
  9. Remove from heat and stir in sour cream (don't boil after adding sour cream)
  10. Season with salt and pepper
  11. Serve over egg noodles or rice
