Ingredients
- 150 g bulgur wheat
- 250 ml hot water
- 100 g parsley
- 50 g mint
- 3 medium tomato
- 1 medium cucumber
- 4 whole scallion
- 4 tbsp lemon juice
- 5 tbsp olive oil
- 0.5 tsp salt
- 0.25 tsp black pepper
Instructions
- Pour hot water over bulgur, cover, and let sit for 20 minutes
- Fluff bulgur with fork and cool to room temperature
- Finely chop parsley, mint, scallion
- Dice tomato and cucumber
- Combine bulgur with chopped herbs and vegetables
- Whisk together lemon juice, olive oil, salt, and pepper
- Pour dressing over salad, mix well
- Chill for at least 1 hour before serving
- Serve as part of mezze platter with pita bread
