Ingredients

  • 150 g bulgur wheat
  • 250 ml hot water
  • 100 g parsley
  • 50 g mint
  • 3 medium tomato
  • 1 medium cucumber
  • 4 whole scallion
  • 4 tbsp lemon juice
  • 5 tbsp olive oil
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Instructions

  1. Pour hot water over bulgur, cover, and let sit for 20 minutes
  2. Fluff bulgur with fork and cool to room temperature
  3. Finely chop parsley, mint, scallion
  4. Dice tomato and cucumber
  5. Combine bulgur with chopped herbs and vegetables
  6. Whisk together lemon juice, olive oil, salt, and pepper
  7. Pour dressing over salad, mix well
  8. Chill for at least 1 hour before serving
  9. Serve as part of mezze platter with pita bread
