Tandoori Chicken

Ingredients

  • 1 kg bone-in, skinless chicken pieces
  • 1 cup thick yogurt
  • 3 tbsp ginger-garlic paste
  • 2 tbsp lemon juice
  • 1.5 tsp Kashmiri chili powder
  • 1 tsp garam masala
  • 1 tsp coriander powder
  • 0.5 tsp cumin powder
  • 0.5 tsp turmeric
  • Salt and black pepper to taste
  • 2 tbsp oil or ghee
  • Fresh coriander leaves
  • Lemon wedges for serving

Instructions

  1. Make shallow cuts in chicken pieces
  2. Mix yogurt with ginger-garlic paste, lemon juice, and all spices
  3. Marinate chicken for at least 12-24 hours in refrigerator
  4. Preheat oven to 200°C or prepare tandoor/grill
  5. Thread marinated chicken onto skewers
  6. Grill in tandoor or oven at 200°C for 20-25 minutes, turning halfway
  7. Chicken should be cooked through with charred spots
  8. Optional: brush with oil and finish under high heat for char marks
  9. Serve hot with lemon wedges, onions, and mint chutney
