Tempura

Ingredients

  • 1 cup all-purpose flour
  • 1 cup ice water
  • 1 whole egg yolk
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 2 quarts vegetable oil for frying
  • 1 lb shrimp
  • 2 whole bell peppers
  • 2 whole zucchini
  • 1 whole sweet potato
  • 8 oz mushrooms
  • 1 cup dashi stock
  • 3 tbsp mirin
  • 3 tbsp soy sauce

Instructions

  1. Heat oil to 350°F in deep fryer
  2. Whisk together flour, egg yolk, baking soda, and salt
  3. Gradually add ice water, keeping batter cold and lumpy
  4. Cut vegetables into strips or large pieces
  5. Devein shrimp but leave tail intact
  6. Dip shrimp and vegetables in batter
  7. Fry in batches until golden (2-3 minutes)
  8. Drain on paper towels
  9. Heat dashi, mirin, and soy sauce for dipping sauce
  10. Serve tempura immediately with dipping sauce
