Ingredients
- 500 g Mascarpone cheese
- 4 whole Eggs (separated)
- 100 g Sugar
- 300 ml Espresso (cooled)
- 3 tbsp Cocoa powder
- 24 whole Ladyfinger biscuits (Savoiardi)
- 50 g Dark chocolate (grated)
- 3 tbsp Marsala wine
Instructions
- Whisk egg yolks with sugar until pale and thick (3-4 minutes).
- Gently fold mascarpone into egg yolk mixture.
- Whisk egg whites in a separate bowl until stiff peaks form.
- Fold egg whites carefully into mascarpone mixture in batches.
- Combine cooled espresso with Marsala wine.
- Quickly dip each ladyfinger in espresso mixture and arrange in single layer in 9x13 inch dish.
- Spread half of mascarpone cream over ladyfingers.
- Repeat with another layer of dipped ladyfingers and remaining cream.
- Dust generously with cocoa powder and grated chocolate.
- Refrigerate for at least 4 hours (preferably overnight).
