Tonkotsu Ramen

Ingredients

  • 2 lbs pork bones
  • 1 lb chicken bones
  • 4 quarts water
  • 2 inches ginger
  • 6 cloves garlic
  • 4 tbsp white miso paste
  • 3 tbsp soy sauce
  • 2 tbsp sake
  • 1 lb ramen noodles
  • 4 pieces soft-boiled eggs
  • 8 oz pork belly
  • 2 bunches scallions
  • 8 oz bamboo shoots
  • 2 sheets nori sheets

Instructions

  1. Blanch pork and chicken bones in boiling water for 5 minutes
  2. Drain and rinse bones thoroughly
  3. Place cleaned bones in fresh water with smashed ginger and garlic
  4. Simmer for 12-18 hours on low heat
  5. Strain broth and discard solids
  6. Cook pork belly in soy sauce until tender (30 minutes)
  7. Cook ramen noodles according to package directions
  8. Warm bowls with hot broth
  9. Divide noodles among bowls
  10. Pour hot broth over noodles
  11. Top with pork belly, egg, bamboo shoots, and scallions
  12. Serve immediately
