Ingredients
- 2 lbs pork bones
- 1 lb chicken bones
- 4 quarts water
- 2 inches ginger
- 6 cloves garlic
- 4 tbsp white miso paste
- 3 tbsp soy sauce
- 2 tbsp sake
- 1 lb ramen noodles
- 4 pieces soft-boiled eggs
- 8 oz pork belly
- 2 bunches scallions
- 8 oz bamboo shoots
- 2 sheets nori sheets
Instructions
- Blanch pork and chicken bones in boiling water for 5 minutes
- Drain and rinse bones thoroughly
- Place cleaned bones in fresh water with smashed ginger and garlic
- Simmer for 12-18 hours on low heat
- Strain broth and discard solids
- Cook pork belly in soy sauce until tender (30 minutes)
- Cook ramen noodles according to package directions
- Warm bowls with hot broth
- Divide noodles among bowls
- Pour hot broth over noodles
- Top with pork belly, egg, bamboo shoots, and scallions
- Serve immediately
