Tori No Tatsuta (Soy-Marinated Fried Chicken)

Ingredients
- 2 lbs chicken breast
- 0.25 cup soy sauce
- 3 tbsp mirin
- 2 tbsp sake
- 4 cloves garlic
- 1 inch ginger
- 1 stalk scallion
- 0.5 cup all-purpose flour
- 0.5 cup potato starch
- 2 quarts vegetable oil for frying
- 0.5 tsp salt
- 0.5 tsp black pepper
- 1 whole lemon
Instructions
- Cube chicken breast
- Mince garlic and ginger, slice scallion
- Mix soy sauce, mirin, sake, garlic, ginger, and scallion
- Marinate chicken for at least 2 hours
- Mix flour and potato starch with salt and pepper
- Pat chicken dry
- Dredge in flour mixture
- Heat oil to 350°F
- Fry chicken in batches for 6-8 minutes until golden
- Drain on paper towels
- Serve with lemon wedges
