Tori No Tatsuta (Soy-Marinated Fried Chicken)

Ingredients

  • 2 lbs chicken breast
  • 0.25 cup soy sauce
  • 3 tbsp mirin
  • 2 tbsp sake
  • 4 cloves garlic
  • 1 inch ginger
  • 1 stalk scallion
  • 0.5 cup all-purpose flour
  • 0.5 cup potato starch
  • 2 quarts vegetable oil for frying
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 1 whole lemon

Instructions

  1. Cube chicken breast
  2. Mince garlic and ginger, slice scallion
  3. Mix soy sauce, mirin, sake, garlic, ginger, and scallion
  4. Marinate chicken for at least 2 hours
  5. Mix flour and potato starch with salt and pepper
  6. Pat chicken dry
  7. Dredge in flour mixture
  8. Heat oil to 350°F
  9. Fry chicken in batches for 6-8 minutes until golden
  10. Drain on paper towels
  11. Serve with lemon wedges
