Truffles Pasta

Ingredients
- 400 g Tagliatelle (fresh)
- 100 g Butter
- 50 g Black truffle (shaved)
- 100 g Parmesan cheese
- 2 tbsp Truffle oil (white or black)
- 1 to taste Salt and white pepper
Instructions
- Cook tagliatelle in salted boiling water until al dente (2-3 minutes for fresh pasta).
- Reserve 1 cup pasta water before draining.
- Melt butter gently in large pan.
- Add drained pasta to butter, toss gently.
- Add truffle oil and a little pasta water to create light sauce.
- Season with salt and white pepper.
- Transfer to serving platter.
- Shower shaved truffle over pasta.
- Use microplane to grate Parmesan over top.
- Serve immediately.
