Truffles Pasta

Ingredients

  • 400 g Tagliatelle (fresh)
  • 100 g Butter
  • 50 g Black truffle (shaved)
  • 100 g Parmesan cheese
  • 2 tbsp Truffle oil (white or black)
  • 1 to taste Salt and white pepper

Instructions

  1. Cook tagliatelle in salted boiling water until al dente (2-3 minutes for fresh pasta).
  2. Reserve 1 cup pasta water before draining.
  3. Melt butter gently in large pan.
  4. Add drained pasta to butter, toss gently.
  5. Add truffle oil and a little pasta water to create light sauce.
  6. Season with salt and white pepper.
  7. Transfer to serving platter.
  8. Shower shaved truffle over pasta.
  9. Use microplane to grate Parmesan over top.
  10. Serve immediately.
