Turkish Delight (Lokum)

Ingredients

  • 400 g sugar
  • 150 g cornstarch
  • 2 tsp cream of tartar
  • 400 ml water
  • 2 tbsp rose water
  • 100 g pistachios
  • 100 g confectioner's sugar
  • 50 g powdered sugar

Instructions

  1. Mix cornstarch and cream of tartar in saucepan
  2. Gradually whisk in water until smooth
  3. Heat over medium, stirring constantly until thick and pale, about 10 minutes
  4. Add sugar, continue stirring for 15-20 minutes until thick and pulls away from sides
  5. Remove from heat, add rose water and chopped pistachios
  6. Pour into parchment-lined 8x8 pan
  7. Cool completely, at least 6 hours or overnight
  8. Mix confectioner's sugar and powdered sugar on plate
  9. Cut Turkish delight into squares and roll in sugar mixture
  10. Store in airtight container between layers of parchment
