Turkish Delight (Lokum)

Ingredients
- 400 g sugar
- 150 g cornstarch
- 2 tsp cream of tartar
- 400 ml water
- 2 tbsp rose water
- 100 g pistachios
- 100 g confectioner's sugar
- 50 g powdered sugar
Instructions
- Mix cornstarch and cream of tartar in saucepan
- Gradually whisk in water until smooth
- Heat over medium, stirring constantly until thick and pale, about 10 minutes
- Add sugar, continue stirring for 15-20 minutes until thick and pulls away from sides
- Remove from heat, add rose water and chopped pistachios
- Pour into parchment-lined 8x8 pan
- Cool completely, at least 6 hours or overnight
- Mix confectioner's sugar and powdered sugar on plate
- Cut Turkish delight into squares and roll in sugar mixture
- Store in airtight container between layers of parchment
