Turkish Lentil Soup (Mercimek Çorbası)

Ingredients

  • 200 g red lentils
  • 1 large onion
  • 1 medium carrot
  • 1 medium potato
  • 30 g butter
  • 1000 ml beef broth
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp paprika
  • 2 tbsp lemon juice
  • 2 tbsp fresh mint

Instructions

  1. Rinse red lentils thoroughly under cold water
  2. Dice onion, carrot, and potato into small pieces
  3. Melt butter in pot, sauté onion and carrot until soft
  4. Add potato and lentils, stir for 1-2 minutes
  5. Pour in beef broth, bring to boil
  6. Reduce heat and simmer for 20-25 minutes until lentils break down
  7. Blend soup until smooth using immersion blender or food processor
  8. Return to pot if blended separately, season with salt, pepper, and paprika
  9. Add lemon juice and fresh mint
  10. Serve hot, optionally drizzle with extra butter and sprinkle of paprika
