Turkish Lentil Soup (Mercimek Çorbası)

Ingredients
- 200 g red lentils
- 1 large onion
- 1 medium carrot
- 1 medium potato
- 30 g butter
- 1000 ml beef broth
- 1 tsp salt
- 0.5 tsp black pepper
- 0.5 tsp paprika
- 2 tbsp lemon juice
- 2 tbsp fresh mint
Instructions
- Rinse red lentils thoroughly under cold water
- Dice onion, carrot, and potato into small pieces
- Melt butter in pot, sauté onion and carrot until soft
- Add potato and lentils, stir for 1-2 minutes
- Pour in beef broth, bring to boil
- Reduce heat and simmer for 20-25 minutes until lentils break down
- Blend soup until smooth using immersion blender or food processor
- Return to pot if blended separately, season with salt, pepper, and paprika
- Add lemon juice and fresh mint
- Serve hot, optionally drizzle with extra butter and sprinkle of paprika
