Unagi Don (Eel Rice Bowl)

Ingredients

  • 1.5 lbs unagi (eel)
  • 3 cups cooked rice
  • 0.5 cup soy sauce
  • 0.5 cup mirin
  • 0.25 cup sake
  • 2 tbsp sugar
  • 2 cloves garlic
  • 0.5 inch ginger
  • 1 tbsp vegetable oil
  • 2 stalks scallions
  • 1 tbsp sesame seeds
  • 1 sheet nori seaweed

Instructions

  1. Clean and fillet eel if whole
  2. Cut eel into 3-inch pieces
  3. Heat oil in skillet
  4. Pan-fry eel skin-side down for 3-4 minutes
  5. Flip and cook other side for 2-3 minutes
  6. Heat soy sauce, mirin, sake, sugar, garlic, and ginger in separate pan
  7. Simmer sauce for 5 minutes
  8. Add eel pieces to sauce
  9. Simmer for 5 more minutes until eel is glazed
  10. Scoop rice into serving bowls
  11. Arrange eel pieces on top
  12. Pour sauce over eel and rice
  13. Garnish with sliced scallions, sesame seeds, and nori strips
  14. Serve immediately
