Unagi Don (Eel Rice Bowl)

Ingredients
- 1.5 lbs unagi (eel)
- 3 cups cooked rice
- 0.5 cup soy sauce
- 0.5 cup mirin
- 0.25 cup sake
- 2 tbsp sugar
- 2 cloves garlic
- 0.5 inch ginger
- 1 tbsp vegetable oil
- 2 stalks scallions
- 1 tbsp sesame seeds
- 1 sheet nori seaweed
Instructions
- Clean and fillet eel if whole
- Cut eel into 3-inch pieces
- Heat oil in skillet
- Pan-fry eel skin-side down for 3-4 minutes
- Flip and cook other side for 2-3 minutes
- Heat soy sauce, mirin, sake, sugar, garlic, and ginger in separate pan
- Simmer sauce for 5 minutes
- Add eel pieces to sauce
- Simmer for 5 more minutes until eel is glazed
- Scoop rice into serving bowls
- Arrange eel pieces on top
- Pour sauce over eel and rice
- Garnish with sliced scallions, sesame seeds, and nori strips
- Serve immediately
