Ingredients
- 250 g all-purpose flour
- 1 whole egg
- 100 ml water
- 0.5 tsp salt
- 400 g potato
- 200 g cheese (farmer's)
- 1 medium onion
- 50 g butter
- 100 g sour cream
- 1 tsp salt
- 0.5 tsp black pepper
Instructions
- Make dough: combine flour, egg, water, and salt, knead until smooth and elastic
- Wrap and rest for 30 minutes
- Boil potatoes until tender, peel and mash
- Grate cheese, finely dice onion
- Sauté onion in butter until golden, add to mashed potatoes
- Mix in grated cheese, season with salt and pepper
- Roll dough thin, cut into 7-8cm circles
- Place 1 tbsp filling in center, fold into semicircle and seal edges tightly
- Boil vareniky in salted water until they float, then cook 2-3 more minutes
- Drain well and serve with caramelized onions and dollop of sour cream
