Ingredients

  • 250 g all-purpose flour
  • 1 whole egg
  • 100 ml water
  • 0.5 tsp salt
  • 400 g potato
  • 200 g cheese (farmer's)
  • 1 medium onion
  • 50 g butter
  • 100 g sour cream
  • 1 tsp salt
  • 0.5 tsp black pepper

Instructions

  1. Make dough: combine flour, egg, water, and salt, knead until smooth and elastic
  2. Wrap and rest for 30 minutes
  3. Boil potatoes until tender, peel and mash
  4. Grate cheese, finely dice onion
  5. Sauté onion in butter until golden, add to mashed potatoes
  6. Mix in grated cheese, season with salt and pepper
  7. Roll dough thin, cut into 7-8cm circles
  8. Place 1 tbsp filling in center, fold into semicircle and seal edges tightly
  9. Boil vareniky in salted water until they float, then cook 2-3 more minutes
  10. Drain well and serve with caramelized onions and dollop of sour cream
