Wonton Soup (Hun Tun Tang)

Ingredients

  • Ground pork: 200g
  • Light soy sauce: 1 tbsp
  • Shaoxing wine: 1 tsp optional
  • Sesame oil: ½ tsp
  • White pepper: ¼ tsp
  • Sugar: ½ tsp
  • Scallion, finely minced: 1-2 tbsp
  • Ginger, finely minced: 1 tsp
  • Square wonton wrappers: 20-25
  • Chicken stock: 4-5 cups
  • Salt: to taste
  • Sesame oil: ½ tsp for broth
  • Scallions for serving

Instructions

  1. Mix all filling ingredients until sticky and cohesive
  2. Place small teaspoon of filling in each wrapper, moisten edges
  3. Fold and seal in triangle or traditional boat shape
  4. Bring large pot of water to boil, gently cook wontons 3-5 minutes until they float
  5. Heat chicken stock, season with salt, white pepper, and sesame oil
  6. Divide cooked wontons into bowls
  7. Ladle hot broth over wontons
  8. Garnish with scallions
