Yakitori (Grilled Chicken Skewers)

Ingredients

  • 2 lbs chicken thighs
  • 8 oz chicken skin
  • 4 bunches scallions
  • 16 pieces bamboo skewers
  • 0.5 cup soy sauce
  • 0.5 cup mirin
  • 0.25 cup sake
  • 2 tbsp sugar
  • 2 cloves garlic
  • 0.5 inch ginger
  • 2 tbsp sesame seeds
  • 0.5 tsp shichimi togarashi

Instructions

  1. Soak bamboo skewers in water for 30 minutes
  2. Cut chicken thighs into 1.5-inch cubes
  3. Cut chicken skin into pieces
  4. Cut scallions into 1-inch pieces
  5. Heat soy sauce, mirin, sake, and sugar until sugar dissolves
  6. Cool teriyaki sauce
  7. Thread chicken and scallions alternately onto skewers
  8. Season skewers with salt and pepper
  9. Grill over medium-high heat for 8-10 minutes
  10. Brush with teriyaki sauce during last 2 minutes
  11. Turn to coat both sides
  12. Sprinkle with sesame seeds and shichimi togarashi
  13. Serve hot with remaining sauce for dipping
