Yakitori (Grilled Chicken Skewers)

Ingredients
- 2 lbs chicken thighs
- 8 oz chicken skin
- 4 bunches scallions
- 16 pieces bamboo skewers
- 0.5 cup soy sauce
- 0.5 cup mirin
- 0.25 cup sake
- 2 tbsp sugar
- 2 cloves garlic
- 0.5 inch ginger
- 2 tbsp sesame seeds
- 0.5 tsp shichimi togarashi
Instructions
- Soak bamboo skewers in water for 30 minutes
- Cut chicken thighs into 1.5-inch cubes
- Cut chicken skin into pieces
- Cut scallions into 1-inch pieces
- Heat soy sauce, mirin, sake, and sugar until sugar dissolves
- Cool teriyaki sauce
- Thread chicken and scallions alternately onto skewers
- Season skewers with salt and pepper
- Grill over medium-high heat for 8-10 minutes
- Brush with teriyaki sauce during last 2 minutes
- Turn to coat both sides
- Sprinkle with sesame seeds and shichimi togarashi
- Serve hot with remaining sauce for dipping
