Ingredients
- 4 whole Egg yolks
- 80 g Sugar
- 100 ml Marsala wine
- 1 pinch Salt
Instructions
- Create a double boiler or heat-proof bowl over simmering water (bowl should not touch water).
- Add egg yolks, sugar, and salt to bowl.
- Whisk constantly with electric mixer or whisk.
- Slowly add Marsala wine while continuing to whisk.
- Continue whisking for 8-10 minutes until mixture is pale, fluffy, and reaches 160°F (71°C).
- Remove from heat.
- Serve warm in glasses, or cool and fold into whipped cream for mousse.
- Serve as is, or with ladyfinger cookies for dipping.
