Ingredients

  • 4 whole Egg yolks
  • 80 g Sugar
  • 100 ml Marsala wine
  • 1 pinch Salt

Instructions

  1. Create a double boiler or heat-proof bowl over simmering water (bowl should not touch water).
  2. Add egg yolks, sugar, and salt to bowl.
  3. Whisk constantly with electric mixer or whisk.
  4. Slowly add Marsala wine while continuing to whisk.
  5. Continue whisking for 8-10 minutes until mixture is pale, fluffy, and reaches 160°F (71°C).
  6. Remove from heat.
  7. Serve warm in glasses, or cool and fold into whipped cream for mousse.
  8. Serve as is, or with ladyfinger cookies for dipping.
