Zhajiangmian (Beijing Fried Sauce Noodles)

Ingredients

  • Fresh wheat noodles: 300g
  • Ground pork (20-30% fat): 200g
  • Fermented soybean paste (huangdoujiang): 3 tbsp
  • Light soy sauce: 1 tbsp
  • Shaoxing wine: 1 tbsp
  • Sugar: 1-2 tsp
  • Garlic, minced: 2 cloves
  • Ginger, minced: 1 tsp
  • Neutral oil: 2-3 tbsp
  • Water: ½-¾ cup
  • Cucumber, julienned: for serving
  • Carrot, julienned: for serving
  • Scallion, sliced: for serving
  • Bean sprouts: optional

Instructions

  1. Mix bean paste with ¼ cup water to loosen
  2. Heat oil in pan, fry garlic and ginger until fragrant
  3. Add pork and stir-fry until no longer pink and lightly browned
  4. Add paste mixture, soy sauce, Shaoxing wine, and sugar
  5. Add water gradually, simmer on low 10-15 minutes until thick and glossy
  6. Cook noodles, drain, and portion into bowls
  7. Top with sauce and fresh vegetables, mix at the table
