Ingredients
- Fresh wheat noodles: 300g
- Ground pork (20-30% fat): 200g
- Fermented soybean paste (huangdoujiang): 3 tbsp
- Light soy sauce: 1 tbsp
- Shaoxing wine: 1 tbsp
- Sugar: 1-2 tsp
- Garlic, minced: 2 cloves
- Ginger, minced: 1 tsp
- Neutral oil: 2-3 tbsp
- Water: ½-¾ cup
- Cucumber, julienned: for serving
- Carrot, julienned: for serving
- Scallion, sliced: for serving
- Bean sprouts: optional
Instructions
- Mix bean paste with ¼ cup water to loosen
- Heat oil in pan, fry garlic and ginger until fragrant
- Add pork and stir-fry until no longer pink and lightly browned
- Add paste mixture, soy sauce, Shaoxing wine, and sugar
- Add water gradually, simmer on low 10-15 minutes until thick and glossy
- Cook noodles, drain, and portion into bowls
- Top with sauce and fresh vegetables, mix at the table
