Şiş Kebap (Shish Kebab)

Ingredients
- 800g lamb or beef (sirloin or tenderloin), cut into 2-3cm cubes
- For marinade: ⅓ cup olive oil
- 3 tbsp lime or lemon juice
- 1 large onion, grated
- 4 cloves garlic, minced
- 2 tsp ground cumin
- 1 tsp paprika or Aleppo pepper
- 1 tsp dried oregano or thyme
- Salt and black pepper
- For serving: warm flatbread or pita, grilled tomato, grilled green pepper, red onion-parsley salad (salatası), yogurt
Instructions
- 1. Combine olive oil, lime juice, grated onion, garlic, cumin, paprika, oregano, salt, and pepper.
- 2. Add meat cubes to marinade. Stir well to coat.
- 3. Cover and marinate for at least 4 hours at room temperature, or overnight in refrigerator.
- 4. If using bamboo skewers, soak in water for 30 minutes.
- 5. Thread marinated meat onto metal or wooden skewers, leaving a little space between cubes for heat circulation.
- 6. Heat grill or grill pan to very hot.
- 7. Grill kebabs, turning every 2-3 minutes to ensure even cooking, for 10-15 minutes total until meat is browned outside and just cooked inside.
- 8. Serve immediately on warm flatbread or pita with grilled tomato, grilled pepper, and red onion-parsley salad.
- 9. Optional: serve with yogurt on the side for dipping or dolloping.
